Celebrity Chef and NRAI Ahmedabad President, Aanal Kotak on LPG Supply Challenges faced by restaurants

“LPG is the backbone of every professional kitchen. Nearly 95% of restaurants across the country rely on it to prepare food and serve guests every single day. Over the past few weeks, the uncertainty around supply has started becoming a real concern for many restaurant partners, with some already simplifying menus and taking tough cost-control decisions just to keep their kitchens operational. While we understand that the government has prioritised certain sectors for LPG allocation, the restaurant industry is also an essential part of the country’s food ecosystem. Today, millions of people depend on restaurants for their daily meals through dine-in and delivery, especially in urban cities where eating out or ordering in has become part of everyday life.Restaurants have also shown their resilience in difficult times. During the COVID pandemic, despite several operational challenges, many restaurants continued to function and ensured that communities had access to food.At this stage, what the industry really needs is greater clarity on LPG supply so restaurants can plan their operations in advance. We hope there can be some consideration for commercial LPG allocation, along with clearer communication, so that restaurants across the country can continue to operate smoothly and serve their customers.”
